Glucoraphanin

Overview

Glucoraphanin is the glucosinolate stored in broccoli and, at much higher concentrations, in broccoli sprouts. It is the immediate dietary precursor of sulforaphane: myrosinase (from the plant or from the microbiome) converts glucoraphanin after tissue disruption.

USDA FoodData Central does not report glucoraphanin. Food pages that tag it therefore use an extended qualitative row—presence is characteristic of broccoli sprouts, but a single per-100 g figure is not treated as compositionally verified from the standard nutrient panel.
